Waffles 5 Ways

Ingredients

1 Rustic Scoop™ Pancake and Waffle Mix

2 1/4 Cups Milk of choice

3/4 Cups Egg whites, 9 Tablespoons Aquafaba (garbanzo bean water), OR powdered egg replacer for 3 eggs

1/2 Cup melted Butter of choice

2 1/2 teaspoons Lemon juice

Extra Add-Ins

blueberries

strawberries

shredded cheese

chives

sprinkles

chocolate chips

Directions

Preheat your waffle iron.

In a medium bowl, place the Rustic Scoop™ Pancake and Waffle Mix. Add the milk, eggs or substitute, melted butter, and lemon juice to the bowl. Using a hand or stand mixer, mix on medium speed until the batter is well combined and smooth.

Choose which add in you would like. Gently fold in your add-in of choice to the batter until fully incorporated. If you would like to do them all, use 5 small bowls and scoop the needed amount of batter (amounts are below) into each bowl. Add as much of the add in ingredient as you would like and fold until fully incorporated.

For large belgian waffles (7"), place 2/3 Cup of batter in the middle of the preheated and greased waffle iron (avocado oil doesn't work for non-stick). Gently press the lid of the waffle iron down. Cook for 7 minus or until the waffles are golden brown. For small waffles use about 1/4-1/3 Cup of batter and cook for 4 minutes or until golden brown. Repeat until all of the waffles are made. Place cooked waffles on a cooling rack until they are ready to eat or freeze.

Makes 7 large belgian waffles or 14 small waffles. Enjoy!
