Posted by Brittany Humphrey on

Ingredients:

  • 4 salmon fillets (about 6 ounces each)
  • 3 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

For the Roasted Vegetables:

  • 2 cups mixed vegetables (such as broccoli florets, bell peppers, zucchini, and cherry tomatoes)
  • 2 tablespoons olive oil
  • 1 teaspoon dried herbs (such as thyme or rosemary)
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

  2. In a small bowl, whisk together the Dijon mustard, honey, soy sauce, minced garlic, lemon juice, salt, and pepper to create the glaze.

  3. Place the salmon fillets on the prepared baking sheet. Brush each fillet with the honey mustard glaze, making sure to coat the top and sides evenly.

  4. In a separate bowl, toss the mixed vegetables with olive oil, dried herbs, salt, and pepper until well coated.

  5. Spread the vegetables in a single layer around the salmon fillets on the baking sheet.

  6. Bake in the preheated oven for about 12-15 minutes or until the salmon is cooked to your desired doneness and the vegetables are tender. The cooking time may vary depending on the thickness of the salmon fillets.

  7. Remove the baking sheet from the oven and let it rest for a few minutes before serving.

  8. Serve the honey mustard glazed salmon alongside the roasted vegetables. You can garnish with fresh herbs, such as parsley or dill, if desired.

This delightful dinner recipe combines the succulent flavors of honey mustard-glazed salmon with the vibrant goodness of roasted vegetables. It's a well-balanced and nutritious meal that will satisfy your taste buds. Enjoy!
