Southwest Seasoned Chicken Breasts for Fast Meals

One of our favorite things at the Co-Op is finding new ways to make a delicious meal with our high-quality products; even better if we can put meals together fast! We know that time is of the essence in most families’ daily schedules, so we have helped you find 6 different recipes you can use for your Southwest Smoked Chicken Breasts to create delicious, fast, and family-friendly meals in the following chicken recipes!

 

Southwest Chicken Skillet

Ingredients Needed:

  • 2 lbs of southwest seasoned chicken
  • 1 can of black beans
  • 1 can of red enchilada sauce
  • 1 small container of green chiles
  • 1/2 bell pepper chopped
  • 1 onion
  • 1 can corn
  • 2 cups of rice
  • top with cheese

 

Combine all of your ingredients in a large skillet, except for the rice and cheese. Cook for about 30 minutes, top with cheese and serve over rice. Just like that, supper is served! One-pan meals are a favorite to all cooks, and this is a great option to serve leftovers (IF you have any left) in an airtight container for a great grab-and-go lunch the next day. This is one of our favorite recipes for its easy meal prep, easy cleanup, and simple ingredients.

 

Southwest Chicken Penne Alfredo

Ingredients Needed:

  • 1 lb Chicken breasts
  • 2 tbsp Cilantro
  • 4 Garlic cloves
  • 1 cup Onion
  • 1/2 tsp Oregano
  • 1 (15 oz.) can of Tomatoes
  • 1 tbsp Honey
  • 1/2 lb Penne pasta
  • 1/4 tsp Black pepper
  • 1/8 tsp Cayenne
  • 1 1/2 tsp Chili powder
  • 1 tsp Paprika
  • 1/2 tsp Salt
  • 1 tbsp Olive oil
  • 1/2 tsp Cumin
  • 1 tbsp Butter
  • 1 1/2 cups Cheddar cheese
  • 1 cup Heavy cream

 

You can actually take out most of these seasonings since your chicken is already preseasoned and ready to go! Go ahead and boil your pasta, drain and set it to the side once it’s ready. Heat up your oil in a large skillet, cook your chicken, and then set it to the side. Add in some diced onion and garlic in the same skillet, add in your diced tomatoes along with your remaining seasonings and bring it all to a boil. Pour your heavy cream slowly into the skillet until you get a nice simmer. Once you have the desired consistency, you can add in your chicken and your pasta, stir everything together and soak in the amazing aromas filling your home from the stovetop. Top with fresh cilantro if desired for a great way to add a little extra heat.

 

You can serve it with your favorite homemade bread topped with some butter and garlic salt for some extra flavor, and enjoy!

 

Chili's Southwest Chicken Soup

  • 1 lb Chicken breasts, boneless skinless
  • 1/4 cup Cilantro, fresh
  • 3 Garlic cloves
  • 1 Green bell pepper
  • 1 (4-ounce) can of green chilies
  • 1 cup Hominy, white
  • 1 Onion
  • 1 (10-ounce) can of Tomatoes
  • 1 qt Chicken stock
  • 2 tsp Lime juice
  • 1/4 tsp Black pepper
  • 1 tbsp Chili powder
  • 2 tsp Paprika
  • 1/2 tsp Salt
  • 3 tbsp Vegetable oil
  • 1 tbsp Cumin
  • 1Bag of corn tortilla chips or tortilla strips
  • 1 Cheese or crumbled queso fresco

 

With only one large pot needed for this recipe and a prep and cook total time of 25 minutes, this is one of the best ways to use your southwest seasoned chicken breasts for an easy family dinner that the whole family will love!

 

Warm your chicken in the large pot with a little bit of olive oil, and then set it to the side on a plate. Add the rest of your oil into the pot and add in your onion, green peppers, and garlic and cook until the onion becomes soft. If you prefer more seasoning, you can add in some cumin, chili powder, and paprika; however, since your chicken breasts are already seasoned, this step is already taken care of. Add in your chicken stock, diced green chiles, diced tomatoes, and hominy, along with your southwest seasoned chicken breasts that have been shredded, and throw them all into the large pot. Bring everything to a boil, then reduce the heat down and let everything simmer for 5-8 minutes. After you remove the entire pot from the heat, you can add in your lime juice and cilantro. You can eat it just as it is or top it with some tortilla chips, cheese, or avocado.

 

Chicken Quesadillas

Ingredients Needed:

  • Southwest Seasoned Chicken Breasts
  • 10-inch flour tortillas
  • Onion
  • Tomato
  • Red and Green Bell Peppers
  • Corn
  • Butter
  • Cheese

 

Dice up your tomato, onion, and bell peppers into small pieces. Heat some oil in your skillet and add in until your onion and peppers begin to soften. Add in your seasoned southwest chicken pieces that have also been torn into small pieces. In a separate pan, you can begin heating up your tortillas. Add your chicken and veggie mix filling to half of the tortilla, top with cheese, and heat the tortilla until the cheese is melted. You can pair it with your favorite salsa, some sour cream, and avocado for a tasty meal in around 20-30 minutes on those busy weeknights!

 

Southwest Chopped Salad

Ingredients Needed:

  • 2 Chicken breasts
  • 1 large head 8 cups finely chopped romaine lettuce
  • 1 Avocado
  • 1 cup Black beans
  • 1 cup Cherry tomatoes
  • 1 handful Cilantro
  • 1 cup Corn
  • 1/2 Cucumber
  • 1 tsp Garlic powder
  • 1 Jalapeno
  • 1 Lime
  • 1 Red bell pepper
  • 2 tbsp Chipotle in adobo sauce
  • 1 tsp Honey
  • 1/4 cup Mayonnaise
  • 1 Pinch of Kosher salt
  • 1/2 cup Pepitas, roasted
  • 1 cup Tortilla chips
  • 1/3 cup Cotija cheese
  • 1/2 cup Greek yogurt
  • 4 tbsp Water

 

Everyone loves a good salad recipe, and this one adds great color, flavors, and textures all combined in one! You can use your favorite salad dressing with this one or make your own by following the above link for the full recipe. For the meal itself, you will want to cook your southwest seasoned chicken breasts and set them to the side as you assemble the remaining salad ingredients.

 

In a large bowl, you will mix together the romaine lettuce, cucumber, bell pepper, jalapeno, cilantro, cherry tomatoes, black beans, corn, pepitas, cotija cheese, and half of the tortilla chips. Then take some of your desired dressing, top over the salad, put on a lid, and mix everything thoroughly. Once everything is mixed well, you can serve it in individual portions for an easy dinner and serve it with remaining tortilla chips, your southwest seasoned chicken, avocado, and a fresh slice of lime for a perfect weeknight meal. This recipe definitely gives warmer weather vibes, but it might be just what you need to spruce up a dreary day as well!

 

Southwest Chicken Egg Rolls

Ingredients Needed:

  • Chicken
  • Black Beans
  • Corn
  • Red Bell Peppers
  • Green Onions
  • Jalapenos
  • Spinach
  • Garlic Powder
  • Salt
  • Pepper
  • Monterrey Cheese
  • Oil for Fryer
  • Egg Roll Wrappers
  • Cilantro Ranch Dressing

 

Cook your southwest seasoned chicken breasts, dice them into small pieces, and set them in a large mixing bowl. Add your black beans, Corn, Bell Peppers, Green Onions, Jalapenos, Spinach, Cheese, and spices into the bowl and mix thoroughly. Set an egg roll wrapper onto a flat surface and lay it into a diamond shape. Put about two tablespoons of your filling into the wrapper, wet the wrapper with a little bit of water on each side, fold your wrapper beginning at the bottom, and get the sides wrapped tightly all the way around. Complete this step until you use up all of your egg roll wrappers, or filling, whichever comes first. Fry each egg roll in a hot skillet for 1-2 minutes and serve with your favorite dressing. Simple, tasty, and a nice mix-up for any night of the week.
