Southwest Skillet Chicken Recipe

We have the perfect new recipe for you and can’t wait for you to put this skillet meal full of bold flavors into your busy weeknight schedule!

 

The nice part of having the chicken already pre-seasoned is that you won't need to worry about having taco seasoning on hand, or any other spices because this chicken already has all of the southwest flavors that you need!

 

Southwest Skillet Chicken

With a very short list of ingredients, you may already have most of this in your pantry, saving yourself an extra trip to the grocery store!

Ingredients Needed:

  • 2 lbs of southwest seasoned chicken breasts from the Co-Op
  • 1 can of black beans
  • 1 can of red enchilada sauce
  • 1 small container of green chiles
  • ½ green bell pepper chopped
  • 1 onion
  • 1 can of corn (drained)
  • 2 cups of rice (your choice of white rice or brown rice)
  • Shredded cheese of your choice for topping

 

Creating Your Meal

Now that you have your ingredients together, let’s work on mixing them up into the perfect meal for any day of the week, although you could also throw this in for a fun twist on “Taco Tuesday!”

 

Take your southwest seasoned chicken breasts and dice them up into small pieces. Put some olive oil in a large skillet and heat oil at medium-high heat. Once it is ready, you can throw in your chicken pieces and brown them on all sides.

 

Toss in all remaining ingredients (excluding your rice and cheese) and mix well. Continue to cook in the skillet until your pepper and onion have softened.

 

While all of that is simmering and making your house smell amazing, you can make your rice. This can be done with a rice cooker, with some packaged rice in the microwave, or the old-fashioned way on the stovetop.

 

Serving Your Southwest Chicken Skillet

Once your Southwest Skillen Chicken is ready to go, and your rice is at just the right texture, you are ready to begin serving your meal to see what your family thinks, although we are pretty sure they will love it!

 

Make a place for your skillet in the center of the table, and use a small bowl for each of your family’s place settings. You can serve the Southwest Skillet Chicken over the rice and top it with your favorite cheese, tortilla strips or chips, avocado, lime juice, hot sauce, mild salsa, sour cream, greek yogurt, fresh cilantro, or chopped green onions, or you can just enjoy it how it is! You could also try adding one of these toppings the first time you make it and then trying something different the next time it's in the weekly recipe rotation until you find your favorite way to enhance the great flavor all of these ingredients have to offer!

 

If, and that's a big IF, you have any leftovers from this one, you can also store them in airtight containers for great weekday lunches to take with you to work.
