Freezer Meal 1 : Lemon Garlic Chicken
Ingredients:
- 2 lbs boneless, skinless chicken thighs
- 4 cloves garlic, minced
- 1/4 cup olive oil
- Juice of 2 lemons
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions:
- In a bowl, mix minced garlic, olive oil, lemon juice, thyme, salt, and pepper.
- Coat chicken thighs with the marinade.
- Place in a labeled freezer bag and freeze.
Chicken Alfredo Pasta
Ingredients:
- Lemon Garlic Chicken thighs (from Meal 1)
- 1 lb fettuccine pasta
- 2 cups broccoli florets
- 2 cups Alfredo sauce
Instructions:
- Thaw the Lemon Garlic Chicken in the refrigerator overnight.
- Cook pasta according to package instructions, adding broccoli during the last 3 minutes.
- In a pan, heat Alfredo sauce and add sliced cooked chicken.
- Mix in the cooked pasta and broccoli. Allow to cool, then freeze.
Freezer Meal 2: Chicken and Vegetable Curry
Ingredients:
- 2 lbs boneless, skinless chicken thighs
- 1 can coconut milk
- 2 tablespoons red curry paste
- 2 cups mixed vegetables (bell peppers, peas, carrots)
- Salt and pepper to taste
Instructions:
- In a pan, combine coconut milk and red curry paste. Bring to a simmer.
- Add chicken thighs and mixed vegetables. Cook until chicken is done.
- Season with salt and pepper. Allow to cool, then store in a labeled freezer container.
Freezer Meal 3: Honey Mustard Glazed Chicken
Ingredients:
- 2 lbs boneless, skinless chicken thighs
- 1/4 cup Dijon mustard
- 2 tablespoons honey
- 2 tablespoons soy sauce
- 1 teaspoon garlic powder
Instructions:
- Mix Dijon mustard, honey, soy sauce, and garlic powder in a bowl.
- Coat chicken thighs with the honey mustard glaze.
- Place in a labeled freezer bag and freeze.
Chicken and Rice Burrito Bowls
Ingredients:
- Honey Mustard Glazed Chicken thighs (from Meal 3)
- 2 cups cooked rice
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- Salsa and shredded cheese for topping
Instructions:
- Thaw the Honey Mustard Glazed Chicken in the refrigerator overnight.
- Cook rice and assemble bowls with chicken, black beans, corn, salsa, and shredded cheese.
- Allow to cool, then store in a labeled freezer container.
