3 Chicken Thigh Freezer Meals

Freezer Meal 1 : Lemon Garlic Chicken

Ingredients:

  • 2 lbs boneless, skinless chicken thighs
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • Juice of 2 lemons
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions:

  1. In a bowl, mix minced garlic, olive oil, lemon juice, thyme, salt, and pepper.
  2. Coat chicken thighs with the marinade.
  3. Place in a labeled freezer bag and freeze.


Chicken Alfredo Pasta

Ingredients: 

  • Lemon Garlic Chicken thighs (from Meal 1)
  • 1 lb fettuccine pasta
  • 2 cups broccoli florets
  • 2 cups Alfredo sauce

Instructions:

  1. Thaw the Lemon Garlic Chicken in the refrigerator overnight.
  2. Cook pasta according to package instructions, adding broccoli during the last 3 minutes.
  3. In a pan, heat Alfredo sauce and add sliced cooked chicken.
  4. Mix in the cooked pasta and broccoli. Allow to cool, then freeze.

 

 

Freezer Meal 2: Chicken and Vegetable Curry

Ingredients:

  • 2 lbs boneless, skinless chicken thighs
  • 1 can coconut milk
  • 2 tablespoons red curry paste
  • 2 cups mixed vegetables (bell peppers, peas, carrots)
  • Salt and pepper to taste

Instructions:

  1. In a pan, combine coconut milk and red curry paste. Bring to a simmer.
  2. Add chicken thighs and mixed vegetables. Cook until chicken is done.
  3. Season with salt and pepper. Allow to cool, then store in a labeled freezer container.

 

Freezer Meal 3: Honey Mustard Glazed Chicken

Ingredients:

  • 2 lbs boneless, skinless chicken thighs
  • 1/4 cup Dijon mustard
  • 2 tablespoons honey
  • 2 tablespoons soy sauce
  • 1 teaspoon garlic powder

Instructions:

  1. Mix Dijon mustard, honey, soy sauce, and garlic powder in a bowl.
  2. Coat chicken thighs with the honey mustard glaze.
  3. Place in a labeled freezer bag and freeze.

 

Chicken and Rice Burrito Bowls

Ingredients:

  • Honey Mustard Glazed Chicken thighs (from Meal 3)
  • 2 cups cooked rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • Salsa and shredded cheese for topping

Instructions:

  • Thaw the Honey Mustard Glazed Chicken in the refrigerator overnight.
  • Cook rice and assemble bowls with chicken, black beans, corn, salsa, and shredded cheese.
  • Allow to cool, then store in a labeled freezer container.
